Garden Salad

This is what I made for my lunch today. I'm eating raw during the day and then having a cooked supper. I know for years when I thought of a salad it was in a small bowl or on the side of a plate. This salad is a meal, you have to remember that when you make it. Here's what I did:

1/2 head romaine lettuce, washed and chopped
1/2 garden cucumber, diced
2 stalks celery chopped
handful cherry tomatoes slice in half
1/2 orange bell pepper chopped
maybe a 1/3 cup of chopped broccoli
1/2 avocado diced
1/2 cup chick peas, rinsed

For a dressing I just used 2 TB Bragg's Apple Cider Vinegar and juice of one lime
Topped it off with a bit of fresh ground pepper and sea salt.

The whole salad has approximately 397 calories. You could leave out either the chickpeas or the avocado if you wanted about 100 calories less. But since I'm still breastfeeding I needed the protein from the chickpeas and the fat from the avocado will sustain you longer also. Regardless it's much less than a meal from McD's and far healthier. :)

Ten on Tuesday : 10 Favorite Children's Movies

  1. Candleshoe - I saw this movie at the drive-in when I was little. I still remember it.
  2. Annie - I was obsessed with this movie. I had the record - yes the real record and I knew all the words to all the songs.
  3. Space Camp - I wanted to be Tish lol
  4. Goonies
  5. The Karate Kid
  6. Wizard of Oz - I remember watching this sitting on the floor eating popcorn and drinking kool-aide.
  7. Toy Story
  8. The Chronicles of Narnia
  9. E.T the Extra-Terrestrial
  10. Little Women - The one with Susan Sarandon and Winona Ryder
I could have easily listed more, but I'll stop at 10.

Menu Plan Monday {Feb 7-13}


I woke up this morning with the return of the cold. I actually don't think I completely shook it off from when we originally all came down with it, and I'm the lucky one that gets to have it flair up. Probably because I never really got it too bad the first round. Anyhow I am very grateful that I have this weeks menu planned and ready. It definitely makes it easier when I don't feel well or I am really tired from dealing with the baby and all the other things that life throws my way. All the thinking is done already and I just have to do it. Enough with the suspense, here is this week's menu...

Saturday: Nachos/Taco Salad

Sunday: BBQ Meatballs, Rice and steamed veggies

Monday: Stuffed Shells (click the link and scroll down to Wednesday), Italian Parmesan bread and salad

Tuesday: Crock pot Pork roast with Gravy, roasted red potatoes, Steamed broccoli

Wednesday: Hot dogs, oven fries, peas and carrots

Thursday: Crock pot beef tips & gravy (I couldn't find a recipe for this, that was what I was looking for, so I'm just going to wing it.), whole wheat egg noodles, steamed baby veggies

Friday: Order Out

Menu Plan Monday

Can you believe it? Today is Monday and I'm actually getting this post done on Monday. I think it is amazing! lol Last week everyone in the house was trying to combat a nasty cold/flu thing. Big R ended up with pneumonia and they think his sarcoidosis may be returning. Hopefully not, as the Radiologist said it was hard to read the x-ray due to all the scar tissue from his last round with sarcoidsis. Anyhow he's on antibiotics for the pneumonia and steroids for the sarcoidosis, and hopefully will soon be on the road to recovery.

Without further ado here is this weeks menu plan:

Saturday: Chicken burgers

Sunday: Roast chicken, mashed potatoes and gravy, baby corn

Monday: Chicken fried rice

Tuesday: Beef and bacon pinwheels, home oven fries, steamed mix veggies

Wednesday: Ginger garlic pork chops, rice, steamed broccoli (carried over from last week)

Thursday: Taco roll-ups , salad

Friday: Order out :)
