Rainy Day Cupcakes

>> Tuesday, April 7, 2009

These are the cupcakes I baked today. I called them Rainy Day Cupcakes because today is a rainy, dreary day and these cupcakes looks so cheerful (to me anyhow).

I had a mix in the cupboard for confetti cake I guess it was, so I decided to just use that for these. Made up a typical butter cream frosting, tinted with Wilton gels. It was a lot of fun piping these and I can't wait to play more with my new tip set. *Thanks mom!*

I used the Wilton Round XL tip. It has to be the REALLY big hole. Also, when I piped, I made sure the icing was a little more stiff than usual (by adding less milk) and I made sure that I pulled the tip up away from the cupcake as I was frosting around the cupcake, each layer ontop of the next. It helps with the wider tip, covers more of the cupcake on that base level. Let me know if you have any more questions or if I can help!! :) Thanks for stopping by my blog!!

PS... those rainy day cuppies are super cute! :)
